Egg Substitute Calculator

Different substitutes replace one egg in different amounts. Pick one and scale it to the eggs your recipe needs.

—

This result is the amount of substitute to use instead of the number of eggs entered.

Formula

Flax: 1 tbsp flax + 3 tbsp water per egg. Applesauce: 60 ml per egg. Banana: half a banana per egg.

How it works

Eggs bind, leaven and add moisture, and no single substitute does all three perfectly. Flax binds well, applesauce adds moisture, and banana adds both moisture and sweetness.

Substitutes work best in muffins, pancakes and quick breads. Delicate cakes and custards rely on eggs more heavily and are harder to replace.

Worked example

For example, replacing 3 eggs with flax eggs needs 3 tablespoons of ground flax mixed with 9 tablespoons of water, left to rest for 5 minutes to thicken.

FAQs

Which substitute is best for muffins?
Flax eggs are a reliable all-rounder for muffins and quick breads.

Will banana change the flavour?
Yes, slightly — it adds sweetness and a hint of banana, which suits breakfast bakes more than savoury ones.

Do I need to adjust other liquids?
With applesauce, reduce other liquids slightly, since it adds moisture of its own.
